Might be more direct to point out the difference between ‘masks’ and ‘face coverings’ as defined by the relevant BSI standard (in particular, BSI 0520 version 1.4). Lots of common abuse of the terms, unfortunately. Also, depending on your condition, they could be in breach of the disability discrimination act. There have been successful legal actions resulting in damages being paid due to that.
So along the lines of explaining why their requirement is potentially illegal because of xyz, and warn them that their action may result in a letter from your solicitor etc. might be more robust.
What if they don't want to sign this? We cannot force them to sign it
